SIMPLE HOLIDAY RECIPES

Traditional American holiday meals are typically some sort of roasted meat (turkey, prime rib, ham) along with a bunch of relatively simple side dishes. A lot of attention is paid to the main dish, but the side dishes can be as much of a pain. I've already put up my favorite stuffing recipe; let's put up a few others. The assumption is that some of the folks trying this out are new to cooking, so I'll include the reasoning behind a few choices, along with some basic tips and cautions that new cooks might not have learned the hard way. Yet.

CAERDWYN'S APPLE-SAUSAGE STUFFING

Good enough to be a main dish all by itself. This recipe is scaled to feed a Thanksgiving or Christmas throng of 8 to 12; feel free to divide everything by 2 (if you do so, cook for 5 minutes less). Prep time: 30 minutes preparation, then 30 minutes of cooking. You can do the prep in advance, and slip the stuffing pan into the oven 30 minutes before meal time.

2 pounds savory sausage (I use Jimmy Dean's Sage Sausage; bulk Italian sausage based on whatever meat your preferences dictate works well too)

Well, the rifle IS a Colt...

Yes, this is a joke. No, I don't think that my rifle makes me more manly. No, I'm not in the military. No, the BDUs aren't "real" (though they're made to proper spec). No, I don' think I'm some 'tardo urban ninja survivalist. Yes, it's loaded, yes, it's real, yes, it's 100% legal where I live.

And yes, I know how to use it... pretty well, if I do say so myself. If you're a piece of tan paper with concentric rings printed on, FEAR.

But Applejack IS Best Pony. That ain't subject to negotiation.
